Nutty Low-Carb Granola
I have been honing this recipe over many batches – each one better than the last. The beautiful part is that it’s so versatile. Switch it up to your liking by using your favorite nuts, adding some nutmeg, baking longer for more crunch, or shorter for more chewiness. Make it sweet. Make it peanut-buttery. Make it salty. Make it your own.

  1. Preheat oven to 350 degrees F.
  2. Mix all of your ingredients together in a big bowl.
  3. Grease a baking sheet with at least one inch sides.
  4. Evenly press your mixture into one layer, making the thickness as even across as possible for even cooking.
  5. Cook 20 minutes.
  6. Remove from oven and use a spatula to break into large pieces and turn over. Return to the oven.
  7. Cook 20-30 minutes more until browned and you’ve achieved your desired crunchiness!
  8. Remove and let cool. Store in airtight container and enjoy frequently!
